Effect of modified atmosphere packaging on Brycon amazonicus conservation

Abstract

The matrinxa is much appreciated in the Amazon region, thus increasing the commercial life time is critical. The objective of this study was to evaluate the influence of Modified Atmosphere Packaging - EAM, associated with cooling to prolong matrinxa storage time (Brycon amazonicus) under 2±1°C. The packed samples EAM with CO2(100%); CO2 / N(60/40%) and vacuum their physical and chemical, microbiological and sensory characteristics evaluated during 35 days of storage. Vacuum packed samples showed higher microbial growth, but maintained good quality for approximately 17 days of storage. The samples treated with AMI CO2/N2 (60/40%) CO2 (100%) and showed good quality for about 35 days. The acceptability of the cooked product test was equal to the taste, odor, and texture, except for appearance and color, which were better, with significance level of 5% in treatments CO2/N2(60/40%) and vacuum. This study showed that treatment with modified atmosphere CO2/N2 (60/40%) stood out to the other treatments being a promising technique to extend the life of matrinxa for up to 35 days under refrigeration.
