Color and yields of wild and raised "piracanjuba†(Brycon orbignyanus, Valenciennes, 1849) fillets

Abstract

This is the first coloring and yield comparative study of wild and raised Piracanjuba (Brycon orbignyanus Valenciennes, 1849) fillets, analysing wild fishes from Angélica (MS) and those raised with feed in Pirassununga (SP). It was detected signifficant color differences (P<0.0001) with the wild ones showing higher red and yellow tonality, and lower luminosity. As color is considered the main sensorial factor for commercial acceptance of fish, special attention should be applied to its feed, which will reflect later on color of the meat. The yield obtained (40 ± 2%) was not affected by preparation and origin of the fish.
