Determination of morphometric indices to promote fillets of tilapia (Oreochromis niloticus) industrial yield

Abstract

The objective of this study was to determine the best weight range and the morphometric characteristics favoring the performance of Nile tilapia fillets processed on an industrial scale. The experimental design was completely randomized with three treatments (350-550 g; 551-750 g; 751 - 1000 g) and 15 repetitions. The data were submitted to ANOVA and Tukey's test at 5% probability. The results showed that weight ranges between average values of fish heights ranged from 8.9 to 12.6 cm lengths ranging from 27.8 to 37.1 cm, the thickness ranged from 3.9 chines to 4.2 mm and the income of the fillets varied from 27 to 28.6%. There were statistical differences regarding height, length and thickness of the fillet between the weight ranges. The parameters for achieving greater fillet yield in the industry would be tilapia slaughter in the weight range 551-750 g, averaging 31.2 cm long and 4.2 mm thick loin.
