Abstract

Little is known about chemical composition, spoilage patterns and microbiology of sea bob shrimp (sete barbas), in Brazil. This shrimp has, actually, an important position among the fish landed in Santos (1,997.777 t during 1971 and 4,402.348 during 1972) due to its great acceptance for consumption "in natura" or processed. The authors tried several compounds and tests to evaluate the quality of the ice preserved shrimp and concluded that: 1) TMA and Indol, in the conditions of the experiment, are not suitable as quality tests for this species; 2) in the experimental conditions, the most available quality tests for sea bob shrimp are TMAO, the Picric Acid Turbidity Test(PAT) and the pH measurement.
