In this work they were analyzed graphically and statistically the data on weight composition and proximate composition of corvina fish, Micropogon furnieri (Desmarest, 1822), croaker caught in Brazilian Coast and landing in Santos Fishing Pier. The results of the weight body proportion and proximate composition show that significant variations between sexes at 0.5 confidence level was found in head, trunk (body without viscera), viscera and mineral (ash) and no significant, at same level, was found in weight of fillet, dry weight, protein, oil, Kcal and total weight and total length relation. The oil-protein content in flesh of corvina fillets shows that the species falls in the "A" category of Stansby & Hall (1964), oil-protein fish c1assification.
